As National Honey Month comes to a close, let's give a toast!
Here are some tasty honey-inspired beverage recipes from the National Honey Board. Cheers!

Apple Pie a la Mode
Yield: 1
Ingredients
1¼ oz light or spiced rum
½ oz cinnamon schnapps
3 oz apple cider
1½ oz Honey Simple Syrup (recipe below)
2 scoops vanilla ice cream
½ scoop crushed ice
Method
Combine ingredients in blender. Blend until smooth and garnish with a light cinnamon sprinkle.
Ingredients for Honey Simple Syrup
Honey
Hot water
Method
Heat two parts honey to one part hot water in a saucepan over medium-low heat until the mixture reaches a simmer. Remove from heat and cool. Store at room temperature or refrigerate as desired.
Lasts four weeks in the refrigerator.

Peaches and Honey Cocktail
Yield: 1
Ingredients
1½ oz honey lime syrup (recipe below)
2-3 ea. fresh basil leaves
1-2 oz sparkling water
1½ oz vodka
1 ea. ripe peach, sliced
Ingredients for Honey Lime Syrup
⅓ cup honey
½ cup warm water
⅓ cup fresh lime juice
Method
In a small saucepan combine honey, water and lime juice. Heat on low and mix together, being careful not to let the water boil. Remove from heat once combined.
Muddle basil in a tall glass or cocktail shaker add sparkling water, 1½ oz honey lime syrup, vodka, and a couple of peach slices. Pour over ice and garnish with additional lime and peach slices.

Honey Cardamom Pear Sangria
Yield: 8
Ingredients
1 (700ml) bottle Pinot Grigio
½ cup elderflower liqueur
½ cup pear liqueur
2 cups pear juice
½ cup water
½ cup honey
1 tsp cardamom bitters
2 ea. pears, sliced
1 cup fresh cranberries
Ginger ale for serving
Method
Add honey and water to a saucepan. Bring the mixture to a boil over medium-high heat. Remove the pot from the heat and allow the mixture to come to room temperature.
In a large pitcher add all ingredients, except the ginger ale. Refrigerate for four hours or up to three days. Serve with a splash of ginger ale.

O' Honey Fashioned
Yield: 1
Ingredients
1½ oz honey-flavored Tennessee whiskey
2 ea. maraschino cherries, without stems
1 ea. orange slice, cut in half
1 T honey
3 splashes bitters
Club soda
Method
In a highball, place the cherries, orange slices and honey, macerate with the back of a spoon or muddler. Fill the glass with ice, add the bitters, whiskey and fill the rest of the glass with club soda. Garnish with additional cherries and orange slices.

Pomegranate Cider Bourbon Splash
Yield: 2
Ingredients
2 oz bourbon
2 oz apple cider
1½ oz pomegranate juice
2 tsp lemon juice
1 tsp honey
Splash of ginger beer
Method
Add the first five ingredients to the cup of a cocktail shaker along with some ice. Give the mixture a few vigorous shakes.
Divide the mixture between two rocks (or scotch) glasses filled with ice.
Top with a splash of ginger beer and garnish with a wedge of lemon.
