As modern technology and modern cuisine progress, people have become more conscious of their diets and their allergies. In our 2015 year-end survey of ICA members, caterers said they dealt with more dietary needs and restrictions than ever before. This presents an interesting challenge to caterers: how do you create flavorful dishes for these clients without using traditional ingredients?
We asked ICA caterers to show us some of their creative, delicious dishes that fulfill the dietary requirements of clients, including vegan, vegetarian, kosher, halaal, paleo, dairy-free, gluten-free, and nut-free cuisine. Explore their innovative eats.
