Portugese Sausage and Onion Stew

Ingredients
2 pounds spicy Italian sausage
2 pounds mild Italian sauage
2 quarts yellow onions, sliced
1 ¾ quarts potatoes, cut into ½ cubes
1 quart celery, sliced
1 quart zucchini, sliced
1 ¾ quarts tomatoes, whole peeled, undrained
2 cans (15 counces ea.) red kidney beans, undrained
2 quarts water
2 T garlic, minced
2 tsp anise seed, crushed
Method
- Remove sausage meat from casings.
- Crumble and sauté sausage until cooked.
- Drain off fat.
- Combine sausage and all remaining ingredients in kettle.
- Cover, bring to boil and simmer, covered, for 45 minutes or until potatoes are tender and flavors well blended.
