Who doesn't love a well-crafted cocktail? IZO Spirits mixologist, Joree Weatherly has mixed up a specialty margarita just in time for the big day! (National Margarita Day is February 22.)
"Growing up in San Diego, Mexican cuisine has been a part of everyday life for me. This cocktail is inspired by the flavors of the delicious Al Pastor Taco. The Marg IZO Pastor offers an herbal kick with the sweet finish of pineapple spice that is synonymous with the classic dish. This cocktail is a great way to enjoy some Mezcal on a hot summer’s day preferably with some tacos, salud!” says Weatherly.
Marg IZO Pastor
Ingredients
1 ½ oz mezcal
½ oz Ancho Reyes
1 oz Lime
¾ oz Pastor Syrup (recipe below)
Method
- Mix all ingredients together
- Serve over ice
Ingredients for Pastor Syrup
1 cup agave nectar
½ cup water
½ cup pineapple juice
5 ea. cillantro sprigs
5 ea. Thai basil sprigs
5 ea. parsley sprgs
5 g black cracked pepper
½ de-seeded jalapeño
Method
- Blend all ingredients together
- In a covered pot, bring mixture to a low simmer for five minutes. Strain solids and let cool.
- Once cool, bottle and refrigerate. Syrup will last for two weeks.
- To fortify add 2oz of your favorite tequila to extend shelf life to one month.
