Peeptini embodies spring with the most floral of spirits—gin. Gin liquor, red raspberry purée and lavender syrup enhance the drink's fruity, floral notes. A measure of Cointreau provides sweet citrus flavor. Foamy aquafaba makes it light and airy like a spring day. Creator Daniel Trujillo of Quecho Cantina in New York says: "Easter marks the end of the cold weather and the start of spring. To celebrate, we made a cocktail that invokes the thought of flowers and berries. We created a beautiful pink color, added a touch of refreshing citrus, and brought it all together with Peeps to make the perfect Peeptini."

Method
Combine all the ingredients into a cocktail shaker and give a dry shake (Shake all the ingredients without ice for 7 seconds. This will allow the aquafaba to expand and make the cocktail creamy with a nice, delicious foam). Add ice and shake for another 10 seconds and double strain into a large coupe or martini glass. Garnish with peeps bunny and flower petals.
