Born from the collective vision of Executive Chef-Partner Paul Kahan and Partners Donnie Madia, Terry Alexander, and Eduard Seitan, Publican Quality Meats is One Off Hospitality Group’s neighborhood butcher shop, café, and market, aptly located in Chicago’s historic meatpacking district.

From hand curated selections of local and artisan products, to their incredible In-House Charcuterie and Dry Aging Program a great deal of attention and care goes into every product.
