Recipe: Lemongrass Ginger & Kaffir Lime Housemade Soda

At the 2017 Art of Catering Food, chefs Keith Lord and Jason Sutton discussed the characteristics of Pacific Rim cuisine, replete with beautiful fresh fruit and intriguing spices. (Click here to view their Filipino Pork Lumpia recipe, published last week.)

With the rise in interest for flavorful non-alcoholic beverages, Lord and Sutton offered a taste of soda, featuring snappy ginger root coupled with the zing of lime. Enjoy!

Lemongrass Ginger & Kaffir Lime Housemade Soda
Yield: 6 quarts; Serves 100

Ingredients
12 c sugar
12 c water
24 limes, zest and juice
12 lemongrass stalks
12” ginger root
120 kaffir lime leaves
25 qt soda water

Method
1. Boil water and sugar until sugar dissolves. Add rest of ingredients and cover for 20 minutes
2. Mix 2 oz syrup with 8 oz soda water and garnish with lime wheel and mint sprig.
