It's National Biscuit Month! 

Unlock the biscuit potential by taking these beauties into the dessert occasion. The neutral dough flavor lends itself to many dessert applications. Let your creativity and ingredients guide the way to put this workhorse on your dessert menu.

Mango Royale Biscuits

Pillsbury™ cornbread biscuits become the vehicle for this Filipino-inspired dessert

Yield: 12

Ingredients

12 ea. Pillsbury™ Frozen Cornbread Biscuit Dough
¼ cup water, cool
½ cup graham crackers, crushed

Method

  1. Dip frozen biscuit tops into shallow bowl of water, then into shallow bowl of graham cracker crumbs to coat the top.
  2. Place biscuit pucks in 3x4 pattern on parchment lined, full sheet pan and bake as directed; cool completely.

Ingredients for Assembly

72 ea. mango slices, ⅛ inch thick
1½ cups whipped topping, prepared
1 T graham crackers, crushed

Method

  1. Slice cooled biscuits horizontally; place 6 slices of mango on each bottom half of biscuits.
  2. Scoop or pipe on 1 oz of whipped topping and sprinkle with 1/4 tsp graham cracker crumbs.
  3. Add biscuit top and serve immediately.

Dulce de Leche Biscuit Bomboloni

These simple fried biscuit donuts are anything but ordinary with decadent dulce de leche filling, bringing your customers back for more!

Ingredients

12 ea. Pillsbury™ Southern Style Mini Frozen Biscuit Dough

Method

  1. Thaw biscuit pucks covered, either at room temperature 45-60 minutes or refrigerated overnight.

Ingredients for Assembly

 ¼ cup granulated sugar
½ cup dulce de leche, prepared

Method

  1. Working in batches, drop biscuits gently into fryer basket in oil preheated to 350°F; cover with second fryer basket to keep biscuits submerged.
  2. Fry 4 minutes or until cooked through; drain and immediately toss in bowl with granulated sugar to coat thoroughly.
  3. Pipe 0.5 oz dulce de leche filling into the side of each bomboloni; serve immediately.
 
 

Biscuit Waffle Ice Cream Sandwiches

Pillsbury™ biscuits get waffled and stuffed with ice cream for an ice cream sandwich experience your customers won’t forget!

Yield: 12

Ingredients

Pillsbury™ Easy Split™ Southern Style Frozen Biscuit Dough

Method

  1. Thaw biscuit pucks covered, either at room temperature 45-60 minutes or refrigerated overnight.
  2. Place thawed biscuit onto well-oiled waffle iron preheated to 375°F; bake for 60-90 seconds until golden brown and baked through.
  3. Split in half while warm along the easy split seam to create 2 biscuit halves; allow to cool completely.

Ingredients for Assembly

4 cups ube ice cream

Method

  1. Place browned side of waffle down and deposit 1 - #10 scoop (3 oz) of ice cream.
  2. Add top piece and gently push down to flatten the ice cream; serve immediately.

Tips

  • After sandwiching, press edges of ice cream into toppings such as toasted coconut, chopped nuts, chocolate chips, or sprinkles as desired. Note nutrition information will change.
  • Try different ice cream flavors and topping combinations to create seasonal menu items.
